Nashiji, pear skin, a nice description to describe the structure of the stainless steel outer layer. It gives the knife a bit of a raw look, the product you cut will "stick" less to it, but actually it is applied for the aesthetics. Thanks to the modern elliptical handle of ebony, the knife is nicely balanced. Ebony is already a bit heavier, which is nice in the hand feeling. The beautiful dark deep brown black color gives a luxurious look.
