Santoku • 180 mm • matte black finished suminagashi • VG10 • Red octagonal handle • for right- and lefthand use
I have asked our knifemaker to design a VG10 with Japanese octagonal handle for us and the result is stunning. A 33 layered suminagashi blade with a red octagonal Japanese handle. A laser cut blade, then thinned by hand, which results in a leightweighted knife with great cutting characteristics. The red handle gives the knife a sober look, it is a little heavier than other octagonal handles in our shop, but this will benefit the ideal balance point of the knife: right on the bolster.
Thinning by hand on the Kaiten Toshi (water wheel) makes it possible to adjust the blade where it needs to be adjusted: Super thin behind the cutting edge. Here the knife excels a knife which is grinded by machine, these details will make a difference in practice.
The black matte finish is refined and the layered construction of the blade is clearly visable. The heel is rounded and polished, this will ensure a good grip while cutting.
A Rangelrooij knife has to have its own identity. Now in 2021, I am a knife sharpener for 27 years, I have sharpened many knives. I think as a knife sharpener, I have held many models and brands in my hands. No, a ROOIJ knife is not a new invention of a knife, it's a process of experience, listening to the end user and negotiating with the knife maker.
