The Show series reflects the quality of Nenohi, but this series is lighter in weight and kinder to the wallet. Nenohi is somewhat mysterious about the type of steel they use, but we do know that the hardness is around 63 HRC. They themselves describe this steel as '' A-class Damascus Stainless steel ''. So a core of high hardness, between a matt outer layers. The blade has been adjusted at the choil so you can hold the knife a bit closer to the blade which provides even more control. The rosewood handle is finished with a mosaic pin. The handle is a natural product, so the structure / colors of the wood may differ slightly.
The Nenohi brand was founded in 1993 in Japan, basically because there was a high demand for western style stainless knives. At that time many chefs from Tokyo used the robust stainless knives of European brokerage, but often complained about the enormous difference in sharpness and sharpness retention compared to the Japanese carbon steel.
