Features of the Kagekiyo Ginsan series

This series is made from high quality stainless steel and is forged by Nakagawa Uchihamono. The edge is sharpened thoroughly with outstanding skill and technique, resulting in easy kobazuke (adding an extra microbevel to the primary edge) and resharpening. Beautiful hairline finish of the handle, detailed and careful honing. The handle is made of walnut, the wood also used for high-end furniture, making it durable and water resistant.

GINSAN /Gingami No.3 ("Silver Paper No.3”) / Gin#3 ("Silver#3") / Ginsan-kō ("Silver 3 Steel")

Gingami No. 3, known as ginsan steel silver steel (manufactured by Hitachi Metals Ltd.) is a semi stainless steel. It has a very fine structure, which can be maintained easily and can be sharpened to extreme sharpness. Hitachi steel factory disigned silver to position it next to the well known VG10 steel, same characteristics, but a little less chrome and more refinement. The ginsan silver steel becomes more and more popular with home cooks and professionals.

Knives with a double-sharpened blade and a double shinogi are not new. The refinement with which Baba Hamono finishes his knives can certainly be called unique. The thinning of the blade has been so perfected that there is no unevenness, as you often have with cheaper inferior models. An extremely thin cutting surface provides unparalleled ease of cutting.
