We celebrate 30 years of craftsmanship with special editions, unique to Rangelrooij, including this beautiful San Ju by Tadokoro Hamono.
When I asked Makoto san to make a series for us, he was immediately enthusiastic. Together we came up with silver steel. Makoto san did demand a double shinogi finish. Of course, that is Tadokoro's signature dish! A refined, sharpened blade with the beautiful kanji of Tadokoro on the hira. The power of simplicity. I am very honored to have the opportunity to offer this beautiful series.
You can recognize the knives of Tadokoro san by the double high Shinogi. Their are two Shinogi lines, both sides of the blade have one, whichs adds up as two. On both sides the flat part (hira) meets the shinogi line and from here starts the kireha (primary angle of the blade).This means that the knife is sharpened very thin and refined. You can recognize this by the high forging line (Hazakai) on both sides of the blade, where the silver steel core is clearly visible. By these clear indications you recognize the training of this experienced knife maker, who from the age of 16 worked side by side with of the masters in Sakai. This refined thin construction of the blade is perfect for high sharpness and thanks to the great geometry, a very good food release.
Gingami No. 3, or ginsan steel (made by Hitachi Metals Ltd.) is a stainless steel with a very fine structure, which is extremely suitable for retaining sharpness and can also be sharpened very sharply. The properties of ginsan are comparable to some Japanese classic carbon white or yellow steels. Ginsan is popular with both professionals and home cooks and is generally easier to keep sharp than VG10.
In the meantime, there are large commercial knife makers in Japan who have perfectly automated the entire knife making process. At Tadokoro Cutlery, every knife is handmade by experienced craftsmen.
