Features of the Sakura series

The Sakura series is made entirely by hand in Kanagawa by a select group of craftsmen.

The blades are cooled and sharpened at a slow speed, with great care taken not to overheat the steel, which does not affect the hardness.

The blade is finished with a micro bevel, which is sharpened by hand on a # 12000 whetstone. The result: an edge that can only be described as: "Silky smooth".

Traditional Japanese knives such as a yanagiba, but also some Nenohi knives often have a machi just above the bolster. The machi is the piece of steel that protrudes and widens in the blade. It looks like the blade is not properly seated in the handle, as if the maker was sloppy and did not let the entire tang fall into the handle. Nothing could be further from the truth. Nenohi measures from the tip of the blade to the machi. The machi is used purely to give the index or middle finger enough space between the blade and the handle.

Elwin de Veld about Nenohi

The Nenohi brand was founded in 1993 in Japan, actually because there was a great demand for stainless steel knives in Western style. At that time, many chefs from Tokyo used the robust stainless steel knives of European manufacture, but often complained about the enormous difference in sharpness and sharpness retention compared to Japanese carbon steel.

After many years of designing, testing the shape and testing steel alloys, Nenohi launches its first Western style knives under the name Nenox Premium.

Nenox adheres to the philosophy of continuously improving quality, innovation, attention to detail and the use of top quality materials. Nenohi is one of the absolute top professional knives and is highly valued among the elite chefs from Tokyo and now also the United States.
